Prep time: 20 minutes
Yield: 8-10 servings
Ingredients:
4-5 cups seeded watermelon, cut into 1 inch pieces (about 1/2 a medium sized watermelon)
2 English cucumbers, halved lengthwise, seeded, and sliced
6 Green onions, chopped
1/2 Cup fresh basil (mint works too!), chopped
4-6 Ounces cubed or crumbled feta cheese
1/3 Cup extra virgin olive oil
1/4 Cup balsamic vinegar
Salt and pepper to taste
Directions:
In a large bowl combine the watermelon, cucumbers, onion, basil and feta.
In a small bowl add the oil, salt, and pepper and whisk to combine
Pour dressing over watermelon mixture and toss until coated.
Serve immediately or cover and refrigerate for up to 2 hours prior to serving. This salad is not the best the next day.
